EDIBLE JEWELLERY | Five-Course Jewellery-Inspired Menu in Celebration of Damiani’s 90th Anniversary

Michelin star chef, Pino Lavarra, has crafted a five-course jewellery-inspired menu to honour the 90th anniversary of the luxury Italian jewellery manufacturer, Damiani.

Following the release of Damiani’s 90th Anniversary Collection, featuring 10 limited edition jewellery pieces, Hong Kong’s Ritz-Carlton hotel decided to take each sparkling delight and transform it into something for the foodies. The hotel’s two-star Michelin chef illustrates the excellent art of catering by using Damiani’s traditional themes found throughout the Anniversary Collection.

Damiani’s 90th Anniversary Collection tells the story of the brand over time through their extravagant jewellery pieces. 9 of the collection’s luxury items, numbered 1-9, display different unique characteristics dedicated to each distinctive decade. Lavarra sought to incorporate this into his dinner menu to make the food appear as inviting as possible, whilst reflecting the opulent themes found within the collection.

Chocolate Ring Hazelnuts with Five Spices Sauce

The five-star hotel has previously joined forces with Damiani, creating a lavish jewellery-inspired afternoon tea based on a selection of Damiani’s exquisite handmade jewels. Following their former culinary success, there is no surprise that they are at it again with a five-course dinner menu to celebrate Damiani’s monumental milestone.

Now to excite the taste buds... The menu features a number of mouth-watering dishes that not only look magnificent, but sound delicious too. Squid ink fettuccelle pasta with scallops, lobsters and tomatoes represent the coloured stones of a floral motif from the elegant 1970s Bloom necklace that pays homage to the decade of the ‘Flower Children’. The cured salmon appetiser conveys the 1930s diamond Cascade bracelet, centred on the ‘stylized design of a waterfall which shows the alternation of black and white diamonds with its movements’. The dessert symbolises a beautiful 1980s Tribute bracelet through tempting chocolate ring hazelnuts with a five spices sauce, exemplifying the ‘specially hand-cut amethyst, citrine, madera quartz and prasiolite’ from the bracelet. Cured Salmon with Beluga Caviar and White Snail Caviar

The importance of presentation is echoed throughout the jewellery-inspired menu. Although Lavarra stated that the culinary preparations were “quite complicated” for such an elaborate menu, he said that the experience for him “is about crafting culinary jewellery for the pleasure of the eyes” as a way of expressing “the finest things in life”.

At a price of HKD 1,880 (£150) per person, this exclusive menu will only be available between October 15th and November 30th (excluding November 6-8). So if you fancy indulging in luxurious edible jewellery then you will have to start planning your journey over to Hong Kong soon, where you will be able to devour the dazzling cuisine in Ritz-Carlton’s finest Tosco restaurant. Or if you crave the comfort of your deluxe hotel bedroom, then they will even deliver your sumptuous meal to you whilst you unwind in one of the world’s highest hotels.
